Sweet and Sour Pork

This sweet and sour pork is one of my favorites! Between the flavor, colors, and texture it is like a party in your mouth! The sweetness of the pineapple provides a great contrast to the soy sauce and vinegar. You can serve it over rice or mashed potatoes. You can even eat it by itself if you want. I do!
Whenever I make this for my husband, he has usually eaten most of his bowl by the time I’ve managed to get my own! Luckily, this recipe makes enough for his considerable appetite with enough for seconds.
I use canned pineapple with juice instead of syrup for this recipe. The pineapple juice adds flavor to the cornstarch and water mixture, also called a slurry or a whitewash, that is used to thicken the sauce at the end. I typically use frozen peas as I find they retain more nutritional value than canned. However, canned peas will work if that is all you have available. Just make sure you drain most of the liquid that comes from the can.
Sweet and Sour Pork
Ingredients:

2 Pork Chops
1/3 cup All-Purpose Flour
20 oz can Pineapple chunks, juice reserved
1 cup Chicken Broth
3 Tbsp Apple Cider Vinegar
1 Tbsp Brown Sugar
1 Tbsp Soy Sauce
1 Tbsp Tomato Paste
2 tsp Garlic Salt, divided
1 and ½ cup Assorted Bell Peppers
1 and ½ tsp Ginger
½ cup Peas
¼ cup cornstarch
¼ cup Water
¼ cup Reserved Pineapple Juice
Salt and pepper to taste
Preparation:
Directions should always be short and to the point.
Cut the pork into bite sized cubes. In a pan or, if you’re like me and dislike extra dishes, in a paper plate, mix the flour and ½ tsp each of garlic salt and pepper.
Coat the pork in the seasoned flour and pan-fry until cooked and golden brown.
Drain any excess oil and add the chicken broth, apple cider vinegar, soy sauce, ginger, and brown sugar.
Simmer for approximately 3 minutes.
Add peppers and peas to the mixture and simmer until vegetables are tender.
While waiting for the vegetables, mix cornstarch, water, and pineapple juice.
Add pineapple and adjust seasoning.
Slowly add cornstarch mixture until sauce is thickened to desired consistency.
