Loaded Nachos

When the New Mexico state fair would come into town, my mom, brother, and I would go for a whole day and there were three things that we would almost always get while there; funnel cake, what the fair called "Indian Tacos," and nachos. Who doesn't love nachos, especially when they are loaded with bold flavor and extra cheesy goodness! These loaded nachos are easy to make from home and takes less than an hour to make.
Ingredients
1 lb. Ground Venison or Ground Beef
Tortilla Chips
2 c. Shredded Cheese, either cheddar or a Mexican style cheese mix.
1 Onion, diced
1 Bell Pepper, diced.
1/2 tsp Cumin
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Chili Powder
1/4 to 1/2 tsp Cayenne Pepper (Optional)
Step 1
Sauté the onions and peppers until the onions are translucent.
Add the venison or beef.
Add the seasonings and cook until meat is cooked.
Step 2
For this step you can either assemble the nachos on a cookie sheet (lined with aluminum foil for easy cleanup) or you can assemble them on oven safe plates.
To assemble, layer chips, cheese, beef/venison mix, and more cheese.
Bake at 350 until cheese melts.
